This study compares the prevalence of microbial contamination between dometically grown produce and Mexican produce in packing sheds, and identifies specific processing practices that contribute to increased contamination in such products. The study focuses on live commodities that have been involved in disease outbreaks: leafy greends, leafy herbs, green onions, cabbage and melon/cantaloupe. Sources of fecal contamination will be investigated by measuring the microbial quality of process water, measuring fecal indicator organisms on hand rinses from produce handlers, and conducting sanitary surveys....
