TO ENSURE THE DESTRUCTION OF TRICHINAE IN PORK PRODUCTS, ONE TREATMENT METHOD REQUIRES DRY-CURED HAMS TO HAVE MINIMUM INTERNAL BRINE CONCENTRATION OF 6 PERCENT. SUCH TREATMENT METHOD REQUIRES LABORATORY ANALYSIS AND CALCULATIONS BY THE ESTABLISHMENTS. THE LABORATORY AND CALCULATION RESULTS MUST BE FILED AT THE ESTABLISHMENT FOR REVIEW BY FSIS PERSONNEL TO VALIDATE COMPLIANCE.
